Daigle's Cajun Sweet Pecan Garlic Sauce
Years ago, Gayle Daigle created her own Sweet and Sour BBQ sauce and used it on many of their favorite oven-baked meat dishes. Then their two sons Toby and Ted came along. As they grew, their sauce became the highlight of every meal. Gayle then decided to baste the sweet and sour sauce on dishes, such as chicken breast, pork fingers, leg quarters, pork chops, and chicken tenders. Those growing boys always wanted extra sauce on the side for dipping. Time after time she made extra sauce and stored it in the refrigerator, just enough to share it with family, friends, and co-workers. Adding the sauce to chicken and pork fingers soon became a big hit at many Christmas parties for Doctor's Hospital, the famous Daigle Christmas Eve party, and also at the Trahan’s Christmas party. Her family and friends always wanted Gayle to bottle this great sauce. Daigle Family Co. came alive soon after and since won several BBQ and Hot Sauce awards!
BBQ Bacon Wrapped Chicken Bombs
- Cajun Seasoning
- 8 Chicken Breast Halves
- 4oz of cream cheese
- 16 slices of bacon
- 4 jalapeños
- Daigles Cajun Pecan BBQ Sauce
- Pre heat over to 375 degrees
- Season chicken breast with Cajun Seasoning and pound until 1/4" thick.
- Cut each Jalapeño in half
- Mix the cream cheese with 1Tbs of Pecan Garlic BBQ Sauce
- Spread the cream cheese mixture in each jalapeño halve.
- Place a jalapeño halve on the chicken breast and wrap it up as best you can
- Brush Pecan BBQ Sauce on top of the chicken
- Wrap 2 slices of bacon around each chicken wrap
- lightly brush each bacon wrap with more Pecan BBQ Sauce
- repeat this with each the rest of the chicken and place on baking sheet
- bake in the oven at 375º for 40 minutes or until chicken is thoroughly cooked
Hanley's Strawberry Vinaigrette
So we know this doesn't contain Pecans... but we think this vinaigrette pairs perfectly with pecans either in a salad, cream cheese, and so much more!
The Hanley's created this dressing the same year that the company started, it actually came from a readers voting on a blog post when Richard Hanley had a flat of strawberries from working at the farmer’s market.

Blue Magnolia Bread Pudding
Ingredients for Bread Pudding
You will need the following ingredients to use with the bread pudding mix.
2 egg yolks, 4 cups of milk, and bread. Pan Size: 2.5 quart or 9x9 works best.
Types of Bread: 4 small hamburger buns work best for consistency of final product. French bread or croissants are great alternatives. When using French bread, use (8-9) 1" slices. Bread should fill pan half-way.
INGREDIENTS FOR PRALINE SAUCE
3 tablespoons (1 1/2 oz.) salted butter
1 tablespoon all-purpose flour
1 cup heavy whipping cream
1/2 cup packed dark brown sugar
2 tablespoons vanilla extract
1/4 teaspoon ground nutmeg
1/8 teaspoon table salt
Make the bread pudding according to the instructions on back of the Blue Magnolia Package. For the Praline topping; melt butter in a small saucepan over medium-low; whisk in flour. While cooking sauce down, whisk constantly, until foamy and golden brown (usually 3 to 4 minutes). Whisk in cream and brown sugar. Keep whisking constantly, until thickened, about 3 minutes. Whisk in vanilla, nutmeg, and salt. Wish until bubbly (2 to 3 minutes). Serve over bread pudding and top with pecans.
