Cajun's Choice Jambalaya Mix
This centerpiece dish of great Creole/Cajun cookery can accent seafood, chicken, and cured meats individually or in a tasty medley. The combination of tomatoes, onions, green peppers, celery, and garlic simmered with our original spice blend creates a versatile one-pot dish with a lively mix of flavors. Our authentic Louisiana seasoning of red, black, and white peppers with onion, garlic, filé, and parsley adds just the right heat and flavoring for this celebration meal.
Instructions
You’ll need: Cajun’s Choice Jambalaya Seasoning Mix, 1 1/2 lb. boneless chicken (cut into bite-sized pieces) and/or medium uncooked, cleaned shrimp, 1 lb. smoked sausage, sliced (Kielbasa works well), 2 cups chopped onion, 1 cup chopped celery, 1 cup chopped bell pepper, 4 cups chicken broth, (1) 15 oz. can diced tomatoes, 2 cups long grain rice (uncooked) Brown sausage and chicken in 6-8 quart pot (if needed, use 2 tablespoons butter or olive oil to prevent the chicken from sticking). Remove meat from the pot and set aside. Drain off all but about 2 tablespoons of drippings, add vegetables and sauté on medium heat for 15 minutes. Return sausage and chicken to the pot, add broth, tomatoes, and Jambalaya Seasonings Mix. Bring to a boil. Add uncooked rice. Cover and simmer for 5 minutes. Stir well. Cover and cook over low heat for an additional 45 minutes. If using shrimp, stir in during the last 15 minutes of cooking. Serves 6-8. The leftovers are great in the microwave.
