First you make a (Savoie's) Roux

Savoie's is my go-to roux when making a gumbo. Not only does it save a ton of time (no need to stir and stir and stir to make that roux), the flavor is perfect. Unless you're a purist who prefers to spend hours making a gumbo, use Savoie's instead.
