1 lb. Blue Runner Black Beans, 8-10 cups water, 1 lb. salted cured pork, 1 onion chopped, 4 toes garlic diced, 1 green bell pepper chopped, 1 red bell pepper chopped, 1-2 tbs. of white vinegar, 2 tbs. cumin, 1 large bay leaf, salt & pepper to taste.
Soak beans in water overnight. Rinse. Add beans with water to a large pot, bring to boil. Reduce to simmer. In a separate skillet brown meat and set aside, reserving fat drippings. In drippings, sauté onion, garlic and peppers. Add meat, vegetables, and bay leaf to beans. Add salt, pepper and cumin seasoning to taste. Cover and simmer, stirring occasionally for about 1 to 1½ hours, or until tender. Add white vinegar while cooking. Remove bay leaf. Serve over bed of steaming rice. Yields 6-8 servings.
