Cajun Power Sweet Treat Sweet Potato Crunch
Casserole Ingredients:
6 large sweet potatoes
1 stick butter; melted
1 cup brown sugar
Splash of milk
Pinch of salt
Cajun Power Sweet Treat Cinnamon Sugar to taste
Topping Ingredients:
1 cup brown sugar
⅔ cup flour
1 cup pecans; chopped
1 stick butter
1 Tablespoon Cajun Power Sweet Treat Cinnamon Sugar
Directions:
- Peel and cut sweet potatoes into medium sized chunks
- Bring a pot of water to a boil with a few pinches of salt
- Once boiling, add sweet potatoes to pot and boil until potatoes are just fork tender
- Make topping while potatoes boil by coating pecans with flour, Cajun Power Sweet Treat Cinnamon Sugar, and brown sugar. Once pecans are coated, add melted butter and mix together. Set aside until ready to assemble casserole
- Once potatoes are done boiling, place potatoes into a large mixing bowl
- Add stick of melted butter, splash of milk, brown sugar, salt and Cajun Power Sweet Treat Cinnamon Sugar to taste (we used about 1 tablespoon)
- Mix together with a hand blender until smooth
- Place sweet potato mixture into casserole dish and top with pecan topping you set aside earlier
- Bake at 350 degrees for 35 minutes
