ZCC Tomato Sauce

1 tablespoon olive oil
2 tablespoons tomato paste
1/4 cup rehydrated Zydeco Chop Chop
1 28oz can crushed tomatoes
1 teaspoon oregano
 

1. Saute Zydeco Chop Chop and the tomato paste and olive oil in a saucepan for 2-3 minutes.
2. Add crushed tomatoes, brown sugar and oregano. 
3. Stir to combine.
4. Simmer for 30 minutes. 
5. Use immediately in your favorite dishes, store in the refrigerator for 3-4 days or in the freezer for up to 4 months.
