  • 4 Cups cooked white rice

  • 1 cup frozen peas and diced carrots

  • 1 egg, whisked

  • 1/3 cup soy sauce

  • 1 tablespoon sesame oil (vegetable oil will work)

  • 1/3 cup rehydrated Zydeco Chop Chop

  • 1/2 pound cooked Crawfish Tails (or other protein such as shrimp or chicken)

  • 1 green onion, diced for garnish

To a very hot skillet or large pan add oil and 1 cup frozen peas and carrots. Sauté for 3-4 minutes until cooked through. Scoot all of the veggies to one half of the pan. Add egg and allow to cook for 1 minute, then scramble it with a spoon or spatula and stir in with veggies.

Add rice to pan. Add soy sauce and Zydeco Chop Chop and Crawfish Tails and stir over medium heat for 6-8 minutes until browned. Remove from heat, top with sliced green onions and serve warm.
