Zydeco Sweet Potato Salsa Recipes

Zydeco Country Style Pork Ribs

Ingredients:

1 Package Country Style Pork Ribs

Salt & pepper to taste

Juice of 1 line

Dash of orange zest or 2-3 pieces chopped candied orange peel

1 slice applewood smoked bacon

5 cloves garlic finely chopped

Peanut oil or coconut oil

2 small yellow & red bell peppers chopped

¾ cups Chicken broth

4 tbs Zydeco Sweet Potato Salsa


Season Pork Ribs and allow to sit. In a black iron skillet brown chopped bacon in peanut or coconut oil. Add chopped garlic and bell pepper pieces and continue browning. Remove bacon, garlic and bell pepper from skillet and brown pork ribs in oil till seared. Combine the lime juice, orange zest, ¾ cup chicken broth, and Zydeco Sweet Potato Salsa. Add back to seared pork skillet the bacon mix, along with the combined liquids and cook in the oven set at 350 degrees for 2 hours covered until meat is done. This dish is wonderful with the Zydeco Creole Trinity Jambalaya rice. Enjoy!


Variations: You can easily use an Instant Pot for this recipe and use the pressure cook/manual instruction setting for a very tender version of this recipe which cooks in about 37 minutes. Also great to add fingerling potatoes to the meat for an Instant Pot complete main course.

 

Zydeco Sweet Potato Salsa Baked Turkey Wings

Ingredients:

2 large turkey wings cut 2” thick slices

1 medium-size onion chopped

1.5 tsp minced garlic

1 tsp salt

1 tsp black pepper

1 cup chicken broth

1 (16 oz) jar Zydeco Sweet Potato Salsa

 

Preheat oven to 350 degrees F (175 degrees C). Place turkey wings and onion in a black iron pot which has been lightly greased with coconut oil. Sprinkle salt, black pepper, and garlic on the wings and mix so that seasoning is evenly distributed. Mix at least ¾ of Zydeco Sweet Potato Salsa contents with ¾ cup of chicken broth and stir. Pour the Salsa & broth mixture into the iron skillet on the side of the pot leaving the seasoning on the turkey surface untouched. Cover & bake for 1.5 hours until sufficiently tender checking occasionally. Feel free to add additional broth to assure that your turkey is tender and sufficient juice content has been produced for serving with rice or fingerling potatoes.

 

Variations: Use the oil of your choice to lightly grease the black iron skillet & put a couple of slices of all-natural sliced bacon strips on the bottom of the pot. Add fingerling potatoes and the turkey at the onset and bake for the duration gauging potatoes for tenderness. Substitute chicken legs, thighs, or breasts for turkey.

 

Zydeco Sweet Potato Stuffed Bell Peppers

Ingredients:

3 large multi-colored bell peppers cut in half

2 lbs. ground pork and beef

1 medium onion chopped

1 (16oz) jar of Zydeco Sweet Potato Salsa

5-6 chopped mini sweet peppers

1 (8oz) bag shredded Pepper Jack Cheese

Salt and Pepper to taste

 

In an iron skillet, brown meat, onions and baby sweet peppers in olive oil. Add Zydeco Sweet Potato Salsa to the miz & any additional seasoning to taste. Add about half of the Pepper Jack Cheese and mix. On a lightly greased pan, fill peppers with meat mixture & bake at 375 degrees for 30 minutes. When done, take remaining cheese & top peppers lightly. Return to oven just until cheese melts. Serves while hot.

 

Variations:

Substitute turkey, venison or even a cauliflower rice mixture and brown in coconut oil. Zydeco Salsa amount can depend upon the degree of saturation you desire for the meat mixture.
