Cajun Spoon Chicken and Dumplings

  1. Bring water to boil in large pot.
  2. Whisk in Cajun Spoon seasoning and add chicken.
  3. Boil for 10 minutes.·
  4. Cut Pillsbury Buttermilk biscuits into quarters and add them to the pot one by one to prevent sticking.
  5. Cover and simmer for 20 minutes on medium-low heat.
  6. Uncover and let sit for 5 minutes. Enjoy!

I always have to fiddle with recipes. I also used half chicken thighs and half chicken breasts. I put the cut up thighs in first and boiled them for 10 minutes. (thighs take longer to cook) Then I added the chicken breast. I let that simmer for 5 minutes. Then I made a batch of my own biscuits. (not very fond of Pillsbury, sorry). I dropped tablespoons of dough into the pot. Covered it and let it simmer for 20 min. Turned the oven to 450 degrees. Uncovered the pot and popped it in the oven for 5-7 minutes. Just enough to get a little crust on the dumplings. I love the contrast in texture. It was really good.
